Almond Joy Protein Shake



I love to experiment with protein shakes.  Start off with a chocolate, vanilla, or strawberry protein powder base and the ingredients you can add in are endless.  I always try and recreate or make something that tastes somewhat similar to a food that I love to eat, but can only eat in moderation.  And candy, I think, is one of the biggest foods people try and recreate when eating healthier.  We all want the taste, but don't want everything else that comes with eating a piece of candy.

 I usually try to add in peanut butter to my shakes because, to me, it tastes like a peanut butter cup.  But when trying to make a shake that has fewer grams of fat, unfortunately, peanut butter is a big no no.  I know.  It makes me sad, too.

If there's one thing that I love just as much as I love peanut butter, it's coconut.  Mix coconut with chocolate and I'll forget all about my peanuty, creamy friend.  Please don't tell him.  I still do love him.

This protein shake contains 30g of protein and 310 calories, making it a GREAT breakfast if you're on the go or you're just not that hungry in the morning.

Ingredients:


  • 1 scoop chocolate protein powder
  • 2 Tbsp. sliced almonds
  • 2 Tbsp. shredded coconut
  • 1/2 cup unsweetened vanilla almond milk
  • 5 ice cubes
Blend all ingredients in a blender until smooth.

Fourth of July Firecrackers


I must warn you.  If you decide to make these I am in no way responsible for the uncontrollable urges you will have to continue filling your plate with these.  I think everyone at my Fourth of July BBQ will agree that they were addicted to these.  They have the right amount of flavor with a great kick to them.  

Ingredients:
  • 1/2 box mini Saltine crackers
  • 1/2 box Cheese-Itz
  • 1/2 box Mini Club Crackers
  • 1 1/2 c. canola/vegetable oil
  • 1 package Ranch salad dressing mix
  • 3 Tbsp. red pepper flakes
In a bowl or measuring cup mix together oil, ranch dressing mix, and red pepper flakes.  Stir to combine.



In an airtight container mix all of the crackers together and pour oil mixture over the crackers.



Cover with lid and shake until all crackers are coated with the oil mixture.



Store in an airtight container until ready to eat.

Mix before serving.

A Delicious Way to Start Your Day- Chocolate/Strawberry/Banana Smoothie

Kicking off my "experimental" eating plan, I thought I'd share some recipes over the next few weeks.  I'll be sharing my meal plans, recipes, and possibly my workout regimen to hopefully give some inspiration or ideas to people who, like myself, need to lose some weight the healthy way.

Today I kicked off my day with this super yummy smoothie.  It has the right balance of calories, fat, and protein.  And best of all, it tastes awesome!  And most of the ingredients you probably already have on hand.  And if you don't, no worries!  A little improvising or simply leaving out certain ingredients is okay.  I'm thinking it will be delicious no matter what!



Ingredients:

  • 1/2 banana
  • 4 strawberries
  • 1/4 cup oats
  • 1/2 cup unsweetened vanilla almond milk
  • 1 tsp. raw honey
  • 1 Tbsp. PB2 ( can use regular peanut butter )
  • 1/2 scoop chocolate protein powder ( can use 1 Tbsp. cocoa powder )
  • Handful of ice

Directions:

Add ingredients into a blender.  Blend until smooth.

Enjoy!

Grilled Garlic Butter Mushrooms

If you love mushrooms like I do, you are going to LOVE this simple side dish.  It's bursting with flavor and it's so easy to make.  I actually made these on the George Forman grill because it was raining ( in Florida? Who knew!). Just load a few up on some skewers, grill, brush on the butter, and enjoy.  I'm not going to lie, this was actually my lunch one day.  Yes.  I ate an entire package of mushrooms by myself.  I'm not ashamed!


Ingredients:


  • 1 package whole mushrooms
  • 2 Tbsp. butter
  • 1 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/4 tsp. basil
  • 1/4 tsp. dried parsley


Directions:

Melt butter in a small dish.  Add garlic powder, salt, basil, and dried parsley.  Mix well.

Wash your mushrooms and pat dry.  Place mushrooms on a skewer.  ( I fit 3-4 mushrooms on each skewer.)

Place on the grill and cook for 3 minutes.  Brush with butter mixture and flip over.  Cook them another 3 minutes and turn again.  Continue flipping and basting until all of your butter is finished and your mushrooms are tender.

Easy (And Delicious) No Bake Oreo Trifle

With continuing on about our 4th of July BBQ and sharing a few recipes and ideas, I had to share this Oreo trifle recipe.  Not going to lie, this dessert was so amazing and I was actually sad to see the trifle bowl empty.  It makes for a good dessert because it's quick, simple, no bake, and well... it has Oreos!  I could have started with 'it has Oreos' and didn't even have to list the other reasons, actually.





Ingredients:



  • 1 package of Oreos
  • 1/2 cup butter, melted
  • 1 large box of instant chocolate pudding
  • 16 oz container of Cool Whip
  • 8 oz package of cream cheese, softened
  • 1 cup of powdered sugar

Make chocolate pudding according to directions.  Place in fridge to set.  

Meanwhile, crush the package of Oreos with a rolling pin or in a food processor.  Take half of the crushed Oreos and place them on the bottom of your trifle bowl.  Pour melted butter on top, mix well and press down to make a crust.

Beat cream cheese in a mixing bowl until fluffy.  Blend in powdered sugar and then fold in container of the Cool Whip, reserving a little plain Cool Whip to finish off the top.  Spread some of the mixture over the top of the crushed Oreo crust.  


Top with chocolate pudding, then top the pudding with crushed Oreos.

Continue layering, finishing off with the plain Cool Whip you reserved.  Sprinkle the top with Oreos.

Cover and refrigerate until ready to serve.

Patriotic Red, White, and Blue Striped Deviled Eggs

This Fourth of July has certainly been a special one.  Swimming, great food, family, & fireworks.  That's what the Fourth means to me.  A time to be together, enjoying the warm weather, eating yummy food, and celebrating this great country we live in!  And we certainly put some emphasis on the 'eating yummy food' part.  I had family here from up North and wanted to make this day a little extra special.  I'll be blogging about our day in an upcoming post, but I thought I'd share a few recipes from the day first.

These festive little eggs were the perfect side dish for our decorated table.  What's a BBQ without deviled eggs?  I don't think I've ever attending or hosted one without them.  And I don't think I ever want to attend one that doesn't have them.  {So, if you ever invite me the a BBQ and tell me what's on the menu and I decline, please read the statement before this.}





I have to admit, these are a little more time consuming than regular deviled eggs, but not by much.  They're pretty easy to make and you can make them a day ahead of time.  Just try it, I promise it won't be that bad! Honest!

Below I'll post how to actually make a deviled egg, if you don't know how to already.  But I don't have exact measurements for each ingredient because, well, I never measure.  And I always make a different amount of eggs each time I make them.  So I'll try to explain as best as I can.

To Make Deviled Eggs:

  • Eggs
  • Mayonaisse
  • Mustard
  • Salt & Pepper
1. Start by placing your eggs in a sauce pot and cover with water.  Place over high heat, and boil for 10 minutes.  Turn off the heat and cover.  Let it sit on the burner for a while. I found that boiling them for a quick 10 minutes and then placing the lid on, it doesn't dry your eggs and you're left with a bright yellow yolk.

2. Once the eggs are cool, cut in half lengthwise and carefully scoop out the yolks into a bowl.  

3. This is when you'll be striping the eggs, which you can find the directions below.

4. To make the filling, you can either mash the yolks by hand if you like the filling a little lumpier or place in a food processor for a smoother filling. When I want them to look fancy shmancy I place them in a food processor so it's easier to use a piping bag and there won't be any lumps getting stuck in the decorating tip.

5. Add in enough mayonnaise so the mixture is really moist.  I only add in a little mustard (probably around 2 tsp. or so) for a little extra color and taste, but I don't want it to be overpowering.  Add salt and pepper to taste.

6. Then pipe or spoon the mixture into the egg whites.  Then you're done! :)

To Make Striped Eggs:

  • Deviled eggs (without filling)
  • 1/2 cup boiling water
  • 2 tsp. white vinegar
  • Red food coloring
  • Blue food coloring
Pour 1/4 cup of boiling water into two small bowls.  Add in 1 tsp. of vinegar into each bowl and red food coloring into one bowl, blue into the other.  For this, I used Wilton's food coloring.



Next, take your egg whites and dip one side into the blue water for a few seconds and then set on some foil or wax paper to dry.



After you've dipped all the eggs, dip the other side into the red water for a few seconds.


 Place the eggs back onto the foil or wax paper to dry for a few minutes.  This is the only reason it takes a little longer is because of the drying time.  Patience, grasshopper!

After they've dried and you notice some excess water in the middles you can just pat them dry with a paper towel or napkin.  The vinegar in the water or any excess water in the middle doesn't change the taste of the egg at all.

For these eggs I placed my yolk mixture into a pastry bag with a decorative tip.  

I used a tall glass and placed the bag in, and wrapped the top around the rim of the glass.  Makes filling the bag MUCH easier when you don't have extra hands there helping you hold that sucker open!



Pipe the mixture into your patriotic little eggs, and you're finished.  

See?  That wasn't so bad.  Next time, ya gotta trust me!
